Let the fun begin!

Yay! My New Cast Iron pan arrived today! My husband ordered it from The Lost Kitchen for Mother’s Day and it just arrived! So.. we need to season it! I will be following Erin’s instructions!

Preheat the oven 250 degrees

Set your pan over high heat until hot, then rub the surface with shortening using a paper towel. Crisco is the the preferred option because you want a grease with a high smoke point or you run the risk of the oil going rancid. You could use coconut, vegetable or olive oil but only if you are going to wash and season the pan frequently.

Next, Put the pan upside down on a rimmed baking sheet and heat in the oven for an hour.

Turn off the oven and let the pan sit in the oven overnight. Wipe out the excess shortening and it is good to go.

Erin say’s going forward, Never use soap and abrasive sponges. If the pan needs a good scrub, use kosher salt, warm water and a pot scraper.

After cleaning dry over a low burner.

Reseason pans using her above steps whenever you feel like your pan is not preforming at it’s best!

Erin mentions serving food from the skillet. She means right then and there. Do not store food overnight in skillet.
