The First Dinner

Our first “ Lost Kitchen” dinner was a success! It was a long dinner! I’ve got pictures for you and the final mention of “ where I got it” I would return to all of these places. I’m so happy to have met so many great people already! Jenny from Glass Farm Greens came in to visit me this morning too! 

Here we go! 

We had wine and sangria that I made the night before! 

We started with a nibble board, it included the following- 

-Prairie Pure Cheese-www.Prairiecheese.com Woodstock Saturday Farmers Market -we tried the blue cheese and the butterkase! Butterkase is a mild, soft cheese I would love to make mac and cheese with. I stuffed big green olives with the blue and we ate the rest on asiago parm bread for Van Laar’s www.vanlaarsfruitfarm.com also at the Saturday Woodstock’s Farmers Market. Our favorite combination was bread, blue cheese, Cowboy candy pickled jalapenos and drizzled in honey! Cowboy Candy jalapenos came from www.glassfarmgreens.com in Harvard. They are sweet but super spicy ! Honey tamed them. 

I included organic summer sausage from www.aldenorganicfarms.com located on alden Rd in Walworth, Wi. 

It also included some pecans, basil and prosciutto. 

Radishes and Butter & Quail eggs and celery salt 

I boiled the quail eggs for 5 minutes and cooled in ice water. These were served with celery salt and maldon salt flakes! The quail eggs were as fresh as they get. They were delish. It was like eating a tiny little chicken egg. My son preferred this hard boiled egg over a big chicken egg! Quail eggs came from www.dalesquails.com He is located in Genoa City, WI. 

Radishes & Butter 

The radishes were beautiful and delish, fresh as can be from www.glassfarmgreens.com 21603 Oak Grove Rd, Harvard. We dipped these in salted butter from Finland. Local butter on the list of things to do. Glass Farm Greens offer a farmstand on property. Current hours- Thursday and 

Friday 12-6 Saturday 9-5 and Sunday 11-3. The farmstand offers fresh produce from the farm and her jams, jalapenos, pickles etc. Go get the cowboy candy jalapenos! 

Spring Salad- I roasted some of the fresh asparagus from www.spearstoyou.com in Harvard, IL. You pick is only about 4 more weekends! - sliced radishes from www.glassfaarmgreens.com I mixed these together with pea tendrils also from Glass Farm Greens! These were amazing. I haven't had any better. You can not beat these.

Browned some of the bread from Van Laars in some olive oil on the stovetop just until a nice brown color with crunch. 

This is mixed together with Erin's most delicious Macerated Shallot Vinaigrette. I forgot to add the fresh mint and chives! Oops. Pea’s were also not ready yet so I left them out! This salad is amazing. We added Pansy’s to the salad & everyone ate one! Pansy’s have a peppermint flavor! 

Main dish - Applewood- grilled chicken 

The recipe called for spring chickens but I chose to go with drumsticks from www.terravitaefarms.com Let me tell you, I have never seen such meaty drumsticks! They were delicious and don’t even compare to regular store bought drumsticks. 

These were brined for 24 hours in Erin’s simple brine. Juniper berries, peppercorns, bay, salt and sugar. 

These cooked on the stovetop in the brine for about 20 minutes. We let them cool and brought them to the grill that was prepared with applewood chips. They were cooked to perfection and basted in maple syrup butter ! Terra Vitae Farms is at the Tuesday Farmers Market on the Woodstock Square. You can also order online and pick up from the farmstand. I can not wait to see the actual farm! Colleen is going to take me out to see it all soon! I’ll have all sorts of cool things to share after that! 

Last but not least- Rhubarb Spoon cake 

Erin calls it spoon cake because served warm it would be ooey gooey! Just stick a spoon in and enjoy. I prepared it early in the day so I would be ready. We topped this beauty with fresh homemade whipped cream. I over whipped it, oops, but it was amazing. We added our own touch to this too! We added extra rhubarb compote to the top of each slice with the whipped cream. This is a new favorite. I used my own rhubarb from my garden. Rhubarb is my favorite. I grew up eating bowls and bowls of rhubarb goo. 

That’s it for the first dinner! It was fun. It was an adventure. I met new people and spent some time on country roads. I will be returning to all of them.
